Cran-Pecan cookies

1/2 cup chopped pecans
1/2 cup dried cranberries
14 teaspoons softened butter
3 cups oats
1 teaspoon vanilla extract
1/2 tablespoon granulated sugar
3/4 cup packed brown sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 egg



1. Preheat oven to 350 degrees and line sheet pan with parchment paper.
2. Cream sugar and butter together.
3. Add vanilla, baking powder, cinnamon and egg. Blend well. 
4. Add dried cranberries, chopped pecans and oats. fold in.
5. Drop mixture on cookie sheet in tablespoonfuls. Bake 8-10 minutes. Take out and let cool.

Cherry Chocolate ice cream

We got an ice cream machine! Yes, twas an impulse buy...

Active time: 45 minutes
Inactive time: 2 hours

2 cups heavy cream
3/4 cup sugar
1 cup chocolate chips
1 cup milk
2 cups cherries

Equipment:

CuisineArt ice cream bowl, frozen
Blender


1. Pit cherries and blend all ingredients together except chips.
2. Place in fridge 2 hours.
3. Get out frozen Cuisineart bowl, pour mixture in and mix 30 mins. Meanwhile,  add chips gradually.
